Autumn camping menu: Pumpkin soup after a hike
After an eventful day in the autumnal nature of South Tyrol, there's nothing better than a warming pumpkin soup to recharge your batteries. This classic autumn soup is not only delicious, but also easy to prepare. Here is a simple recipe:
People: 4 I Preparation time: 30 minutes
Ingredients:
- 1 kg Hokkaido pumpkin
- 1 onion
- 1 clove of garlic
- Oil
- 800 ml vegetable stock
- 100 ml whipped cream
- Salt
- Paprika powder
- Chilli flakes
- Pumpkin seeds
Preparation:
1. Wash, halve and deseed the pumpkin and cut into pieces. Finely dice the onion and finely chop the garlic.
2. Heat the oil in a pan. Add the onion and garlic and sauté. Add the chopped pumpkin and 1-2 teaspoons of paprika powder and sauté briefly. Deglaze with vegetable stock and simmer for approx. 15 minutes until the pumpkin is soft.
3 Puree the soup until creamy and stir in the whipped cream. Season to taste with salt and chilli flakes. Divide the pumpkin soup between plates and garnish with roasted pumpkin seeds.
