1. Potato Pancakes with Smoked Salmon
Ingredients for 2 Servings:
- Potatoes: 300g
- Eggs: 2
- Flour: 50g
- Smoked Salmon: 100g
- Creme Cheese: 100g
- Chives: a handful, finley chopped
- Salt
- Pepper
- Oil (for frying)
Utensils:
- Grater
- Bowl
- Pan
- Cutlery to stir

Step 1: Start by peeling the potatoes and grating them on a coarse grater. Squeeze the grated potatoes well to remove excess water.
Step 2: In a bowl, mix the potatoes with eggs, flour, salt and pepper until a smooth dough forms.
Step 3: Heat some oil in a pan and add portions of the batter to form small pancakes. Fry them until golden brown on both sides.
Step 4: After they are finished frying, spread each pancake with a layer of cream cheese and top with smoked salmon. Finally, garnish the pancakes with finely chopped chives and serve warm.
Tip

2. One-Pot Mediterrane Orzo-Pfanne
Ingredients for 2 Servings:
- Orzo (Pasta Rice): 150g
- Vegetable Stock: 500ml
- Cherrytomatoes: 200g, halved
- Zucchini: 1 small, diced
- Black Olives: 50g, pitted and halved
- Feta: 100g, crumbled
- Onions: 1 medium, diced
- Garlic: 2 cloves, finely chopped
- Oregano: 1 tsp., dried
- Basil: 1 Tbsp., fresh and chopped
- Salt
- Pepper
- Oliveoil: 2 Tbsp.
Utensils:
- Big pot or pan with lid
- Knife and cutting board
- Wodden spoon
Preparation instructions
Estimated preparation time: 30 minutes
Step 1: Start by heating olive oil in a large pot and sautéing the diced onions and finely chopped garlic until translucent. Add the orzo and lightly toast it until it turns a golden color.
Step 2: Now pour in the vegetable stock and mix in the halved cherry tomatoes and the diced zucchini. Let everything simmer for about 10-12 minutes until the orzo is cooked through.
Step 3: Finally, mix in the halved black olives, oregano, freshly chopped basil and crumbled feta and season with salt and pepper. Serve the pan hot and enjoy the Mediterranean flavors.

3. Swedish Köttbullar (Meatballs) in Cream Sauce
Ingredients for 2 Servings:
- Minced beef and pork: 300g (mixed)
- Breadcrumbs: 50g
- Milk: 50ml
- Eg: 1
- Onion: 1 small, finely diced
- Garlic: 1 clove, finely chopped
- Beef stock: 300ml
- Cream: 100ml
- Cranberry jam: 2 Tbsp.
- Salt
- Pepper
- Butter or Oil (to fry)
Utensils:
- Lagrge pot or pan
- Bowl to mix
- Knife and cutting board
- Spoon or meatball maker
Preparation instructions
Estimated preparation time: 40 minutes
Step 1: In a bowl, mix the mixed minced meat with breadcrumbs, milk, egg, finely diced onions, chopped garlic, salt and pepper. Form small balls from this mixture.
Step 2: Heat some butter or oil in a pot and fry the meatballs all over. After they are well browned, remove them from the pot and set them aside.
Step 3: Now pour the broth and cream into the pot and bring it to a simmer. Return the meatballs to the sauce and simmer until the balls are cooked through, which should take about 10-12 minutes.
Step 4: Then serve the Köttbullar with cranberry jam. God apt!
